The Coffee Guide (TCG): If you weren’t a barista what would you be?
Matt:Celebrity chef – still just might be yet…!
TCG: How do you have your coffee at home? How do you make it and how do you take it?
Matt: Aeropress filter with a good dusty hangover for measure on the weekend.
TCG: What is your favourite music? (For work or for play).
Matt: Hotel Costes 1-15 for work & play, plus Angus/Julia Stone, Jeff Buckley.
TCG: What’s your favourite food?
Matt: Potato: roast potato, mash potato, pomme puree, chips, fries, pomme frite, crisps, you name it I love it with potato… life’s great with potato.
TCG: Tell us what your best coffee experience was.
Matt: AXIL roasted Ethiopian sidamo (it’s a blueberry sledgehammer to the face).
TCG: If you’re not drinking coffee, what is your drink of choice?
Matt: High end wine, boutique beers & lots of still/sparkling mineral water.
TCG: What made you become a barista?
Matt: I’m ridiculously creative, a very visual creature, fundamentally, completely individually & totally expressive & very good with my hands…naturally!
TCG: What food do you think is the best compliment to a really great coffee?
Matt: None at all… coffee should be appreciated alone, naked, black, that’s all!
TCG: What’s the largest amount of coffees you have ever made in a day?
Matt: Way, way, way toooooo many!
TCG: Where do all the old baristas go?
Matt: Hopefully to heaven.
TCG: Who would make a better coffee, King Kong or Godzilla?
Matt: King Kong, a definite advantage with his long arms & big hands & he’s a lady-killer!
TCG: Where has your coffee making taken you?
Matt: America, New Zealand, around Oz and Europe.
TCG: What is the most exciting thing happening in coffee right now for you?
Matt: Being a specialty coffee roaster & training for competition, exploring & being exposed to buying & roasting the best coffee on the planet! Exciting!
TCG: If you could pick one spot in the world to sit and have a coffee, where would it be, and what coffee would you have?
Matt: Italy with a perfect espresso… I’m so nostalgic & a hopeless romantic!
TCG: If you could make coffee for one other person of your choice (anyone- past or present), who would it be?
Matt: Jimi Hendrix
TCG: Where is your favourite place to hang out in Melbourne?
Matt: Auction Rooms and Der Raum, they’re the complete package!
TCG: What is your guilty pleasure?
Matt: French butter, truffle oils, good EVOO.
TCG: What’s your favourite time of the year?
Matt: Summer. I live by the beach… just check out this gleam!
TCG: What are you reading right now?
Matt: Lots of roasting, brewing, immersion, science, tds text… worm styles!
TCG: What is your favourite movie of all time?
Matt: That’s difficult… maybe Shawshank Redemption (viewed as a youngster).
TCG: Where did you grow up? And what is your fondest childhood memory?
Matt: Both city & country. I’m a product of the best of both worlds, humbled by good old fashioned everything, as well as having your finger on the pulse too!
TCG: What did you do on your last day off?
Matt: Had morning coffee with a good mate at Dead Man espresso, fancy lunch at two-hatted cafe di Stasio, and dinner at my place with my friends & family.
TCG: In a good cup of coffee, how much of it is due to the barista and how much is due to the beans?
Matt: both are as equal to each other. If one fails, they both fail, roasting maybe the most important of all when you get down to particulars & nitty gritty!
TCG: Is decaf a dirty word?
Matt: Hmmm, we won a bronze for our efforts, so the jury is out on that one I’m afraid!
TCG: Is specialty tea the new cappuccino?
Matt: Apples and oranges!?
TCG: What is your favourite kind of tea?
Matt: Green & peppermint combined!
