Sensory Lab is not so much a cafe as a coffee experience. The brainchild of the folks behind St Ali, the Lab offers nine coffees (four blends and five single origins) and four brewing methods (including siphon, pour over and cold drip), encouraging customers to broaden their palates as well as their minds.
Sensing this is not the time to stick with my customary latte, I abandon myself to a lab-coated barista, who prepares a siphoned Ethiopian Yirgacheffe. The result is a delicate, tea-like brew with a floral aroma and jasmine flavour. Light in acidity, there is virtually no mouthfeel and the finish is short and sweet. By contrast, My S3 blend espresso has a deeply complex flavour, underpinned by touches of honey and cocoa. Thick on the tongue, with a medium acidity, it delivers an intensely sweet finish.
While Sensory Lab is not a place to linger – both seating and food options are limited – caffeinistas will appreciate the wow factor, not to mention the gorgeous Slayer machine. Time to experiment.
