The Coffee Guide (TCG): If you weren’t a barista what would you be?
Louis: I would like to be an accountant because I love mathematic and I’m good at calculating. Everyone says accounting is boring. But I love working with numbers. As a barista, I do need to count orders in my brain.

TCG: What’s your favourite food?
Louis: I love Thai food. Most of them have a spicy taste, which I really love- especially a papaya salad. It’s sour and a little bit sweet and salty. Papaya is crunchy and it is good for your health. Sometimes I eat it with sticky rice, which somebody said was weird, but I like it.

TCG: If you’re not drinking coffee, what is your drink of choice?
Louis: Tea is my second drink of choice. Green tea is my favourite, because a cup of tea makes me calm down when it’s in my hand. The smell of tea makes me feel fresh and better.

TCG: Where is your favourite place to hang out in Sydney?
Louis: Na Bangkok restaurant in the city, it’s the favourite place of my friends and I. Good food, good music and a live band.

TCG: Do you have any pets?
Louis: I have two dogs, one is named Lucky and the other one is names Cawii. They are Cavalier King Charles Spaniels.

TCG: What did you do on your last day off?
Louis: I went Coogee Hotel with my friends. We got some schooners and beautiful steaks. We enjoy the sea atmosphere.

TCG: What is your favourite kind of tea?
Louis: I drink green tea, which was bought from Vietnam. It has a strong flavour. It’s bitter with the first sip then there’s a sweetness through your mouth.

TCG: In a good cup of coffee, how much of it is due to the barista and how much is due to the beans?
Louis: It’s 50/50. A good cup of coffee includes a perfect shot, creamy milk and the right temperature. Good coffee beans are a big advantage to bringing good espresso.

TCG: What made you become a barista?
Louis: From video clips on youtube, someone made latte art. I wondered ‘how can they do that?’ On the other hand, my sister has good barista skills. She taught me all my skills.

TCG: How many coffees would you make in the average day?
Louis: I would make 4 kgs of coffee in the average day.
