Eyes widen at the splendid sight of a roaster turning and whirring, while the mind goes every which way with the choice of blends, some single-origin and many fair trade. And in suburban Cheltenham – who would’ve thought!

A good breakfast and lunch menu pairs up with Sweet by Nature cakes. Coffee, however, is the indisputable star in this ethical home of Gigante Coffee, which was first established in Highett in 1993 as ‘San Remo Coffee’ and one of Melbourne’s first roasteries.

Given its justifiably back- rather than front-of-house focus, we order the gold medal-winning Fairtrade blend at the counter. Barista Charles Skadiang extracts and delivers it with attentiveness and finesse. And I’m lifted to new heights by its fragrant, nutty aroma, the earthy, mildly-spiced sweetness, and deliciously long-lingering creamy milk chocolate aftertaste. Sheer brilliance.
